- 500 gm rice(soak them)
- 500 gm mutton meat
- 250 gm potatoes peel off the skin & cut into 2 or 4 pieces
- For gravy:
- 250 gm yogurt
- 5 tomatoes (grind them without seeds)
- 3 large onions cut into slices
- 2 black cardamom
- 6 cloves
- 10 black pepper corns
- 1 inch cinnamon stick
- 1/2 tsp nutmeg and mace
- Salt
- 2 tbsp red chilli powder
- 1/2 tsp Turmeric powder
- 1 tbsp coriander powder
- 8 black aloo bukhra
- 6-8 green chillies cut into 2 pieces
- 1 &1/2 cup oil
- For boiling rice:
- Salt
- 6 cloves
- 1 tsp kewra Essence
- 6 green cardamoms
- For Dum:
- 1/2 tsp zarda color/ orange food color
- 1/2 bunch coriander leaves finely chopped
- 1 lemon slices
- 1/2 tsp kewra essences
Steps to make to make Bombay Biryani
- Boil rice with salt, cloves, kewra and green cardamoms. When rice is half done, strain out the water. Rinse rice with tap water to cool them.
- Take oil in a pan, add onions slices and fry till golden brown. Take out the onions in a plate. Fry potatoes in a same oil and take out them in a separate plate.
- Grind half fry onions and tomatoes.
- Now add ginger garlic paste and meat in oil. Bhonofy it. Now add tomatoes, grinded onions, all spices of gravy except yogurt and green chillies. Bhonofy them till oil comes out. Add water and cook for 20 minutes or till meat is half done.
- After that, add yogurt, potatoes, and green chillies. Cook them again till oil comes out.
- For Dum:
1 layer rice, then gravy (sprinkles half coriander leaves, remaining fried onions,and lemon slices) and last again later of rice.
- In a small glass bowl add food color, kewra and little water. Mix it well.
- Sprinkles remaining fried onions, coriander leaves and food color mixture. Do dum for 15-20 minutes.

- Your Bombay biryani is ready to serve.
