- 1 kg mutton cut into pieces
- 2 tbsp ginger garlic paste
- 1/2 cup chopped coriander leaves
- 1/2 cup chopped mint leaves
- 3-4 green chillies chopped finely
- 200 gms chopped tomatoes
- 1 and 1/2 cup curds
- 3 tbsp kashmiri red chilli pd
- 2 tbsp coriander pd
- 1/2 tsp haldi pd
- 1/2 cup oil or ghee
- 2 tbsp everest biryani masala
- 1 tsp Rose water
- 1 tsp kewra water
- 5-6 large onions sliced and deep fried
- Salt as per taste
- 750 gms basmati rice
- 5 cloves
- 1 inch cinamon
- 2-4 green cardamoms
- 1 black cardamom
- 8 blackpepper corns
- 1 tsp shahjeera
- 2-3 bay leaves
- Juice of 1 lemon
- 3-4 drops saffron colour
- 2-3 drops green colour
- Sliced tomatoes, onions and lime for garnishing
Instructions to make to make Gosht ki Biryani
- Wash the mutton and pat dry,in a bowl mix together the ginger garlic paste, curds,red chilli pd, coriander pd, haldi pd, chopped tomatoes, 1 tbsp everest biryani masala, 1/4 cup chopped coriander leaves, 1/4 cup chopped mint leaves, salt,half of the fried onions and 3 tbsp oil. Leave it to marinate for an hour
- Wash the rice and keep aside for 30 mins.Boil water for the rice then add cloves,cardamom,green cardamom, cinamon, bay leaves, shahjeera then add the rice,salt and lemon juice. Cook till 3/4 done. Drain and keep aside
- In a pot or kadai cover and cook the marinated meat on high flame first,then on medium flame till the meat is tender
- In a pot or kadai spreadb the rice,then sprinkle everest biryani masala, chopped coriander leaves, chopped coriander leaves and few fried onions. Now spread the cooked mutton all over the rice. Lastly spread the remaining rice over the mutton sprinkle the saffron and green colour, then sprinkle rose water,kewra water, then garnish with remaining chopped coriander, mint leaves and fried onions

- Pour the remaining ghee on the rice cover with a foil paper and place the lid. Place the kadai on a tawa first on high flame for 5 mins then on low flame till 15 mins. Serve hot with raita and garnish with tomato slice,onion and lemon
