- Soak soya chunk in hot water for 3 mins. Squiz up the water. Add yogurt into the soya chunk and mix well. Rest aside.
- Wash basmathi rice few times & soak it for 20 mins.
- Heat a pot with ghee, add bay leaf, cardomam, cinnamon and star anise. Saute until fragrant.
- Add onion & saute until the onion turn into golden brown.
- Add bird's eye chilli & ginger garlic paste. Saute until raw smell go off.
- Add tomato mix well. Saute for 2 mins. Add the vegetables and soya chunk. Saute for 3 mins under medium flame.
- Add Biryani powder and chilli powder. Mix well & cook for 3 more mins.
- Pour water and salt. Mix well. You can add 1 tbs of ghee and some fried onion if you want. Cover and cook the Biryani until the water fully absorbed.
- Once done turn off the stove and rest it for 15 mins.
