Handvo / (or Handwa)/ Dhokla is a Gujarati dish. It is made up of various dals and bottlegourd. You may classify it as a type of dhokla.
Ingredients and spices that need to be Prepare to make Dhokla (no eno no soda):
- 3cup basmati rice
- 1cup sabut white urad dal
- 1/2cup toor dal
- 1/4cup chana dal
- 1 fenugreek seeds
- For batter fermentation
- Salt
- 4-5 tsp curd
- 1/4cup chana dal
- For masala
- 3-4 tbsp ginger garlic chilli paste
- 1 tbsp sugar
- 2 tbsp red chilli powder
- 1/2 tsp haldi powder
- as per taste Salt
- 3/4cup chopped coriander
- 300gm bottle grated gourd (optional)
- For Dhokla Tadka
- 1 tbsp mustard seeds
- 7-8 curry leaves
- 2 tbsp sesame seeds
- 1/4 tsp hing
- 2 chopped green chilli
- 1-2 red chilli powder
- 4-5 tsp sugar
- For handvo tadka
- 1 tbsp mustard seeds
- 7-8 curry leaves
- 2 tbsp sesame seeds
- 3-4 cloves
- 2-3 dry chilli
- 1/4 tsp hing
- Other ingredients
- As needed- Methiyo masalo (you can use normal red chilli power)
Instructions to make to make Dhokla (no eno no soda)
- Wash rice and daal 2-3 times. Soak rice, urad daal, chana daal and toor daal individually. (add fenugreek seeds into rice). Soak for 12 hrs.



- Grind all daal n rice separately. Add curd and salt while grinding. Grind to a smooth but slightly coarse paste. Consistency of batter should be like idli batter. Add 1/2 cup chana daal. Mix it into batter.Put aside in a warm place for fermentation.It takes 8-9 hrs for fermentation depending on weather.
Note: If required add water during grinding. You can use the same water that was used for soaking.

- Doubling of the batter original volume is an indication of good fermentation.After fermentation add above listed masala.Add grated bottle gourd.put aside for 15 -20 mins.


- For handwa -Take a non-stick pan. Heat oil. Add all ingredients of tadka.Pour batter in a pan (upto 1/2 of pan) Sprinkle some methiyo masalo. Cover the lid. Cook it for 15-20 mins on low flame.



- After 15 mints check it. When you see entire base becomes crispy turn it on other side. Cook for 5 mins.
note:
You can make handva in appam patra also.


- You can make dhokla from this batter(like idli).For dhokla tadka- oil,mustard seeds, curry patta, chopped green chillies,hing...add dhokla
Add sugar and red chilli powder...cook for 5-7 mints till it becomes slightly crispy and brown.


- Handva/ dhokla is ready. Serve with tea, peanut oil or green chautny.
